- General note - The fimbriated herring is the predominant fish caught in Estancia. This type is salted in brine and dried under the sun after several hours of immersion. The product is called dried sardines in the round (uga, binolad or tuyo). Other methods of fish presentation are dry-salting and Kench-curing (product is called binoro). Shown in photo are mackarels being preserved in the form of dried splits (pinakas or daing) . From Estancia, comes most of the fish sold in Iloilo markets, either in the fresh or preserved state. It had a fish preservation station and a School of Fisheries, both managed by government agencies.
